| Method : |
1.Heat olive oil in pan, add eggplant, zucchini, green bell pepper, celery, onion and garlic, cook for 8 minutes or until crisp-tender, stir occasionally. 2.Add tomatoes, herbs, coarse sea salt and pepper. 3.Cover, simmer until thoroughly heated.
